Hump & Pump WIAW

Hump Day has come, has saw, has conquered. Oh wait, maybe that was me. 😉

I saw this on Instagram, posted by one of the fitness accounts I follow, and thought it was cute. I always love a good clever saying that rhymes!

Plus, I had a rather dramatically intense run this morning. As I began from my house, it was mere sprinkles and I thought it would continue like that and I would get a little wet, but be fine.

No. About half way through my run, it started to downpour. My biggest concern was actually getting shocked from my iPhone/earbuds or damaging my iPhone. I made my way all the way to Bong’s house, as I typically do, and she was not feeling the downpour. I didn’t blame her. She took my electronics and I ran back music-less.

The only rhythm I had was the pitter patter of the rain and the rush of the traffic. How poetic. But really…I NEED music. This morning was no fun for me, despite the fact that I did feel kind of intense.

Today’s post will be a mix of Monday’s dinner, yesterday’s meals and a few from today, since yesterday’s post was dedicated to my reaction of the Forks Over Knives documentary.

Monday’s dinner:

Prepared by my dad, we have here European Flounder grilled fajita style with a sweet potato, grilled bell pepper, snap peas, and a portabello mushroom.

Tuesday’s breakfast:

Cinnamon Walnut Almond Steel Cut Oats

Similar to my Cinnamon Apple Walnut Oatmeal, but without the apples.

As mentioned in my last post, I had a Vega smoothie on my way to work. Favorite flavor yet.

Lunch:

I met my friend Bong for lunch at the Tysons Corner Cava Mezze, right nearby her workplace. She always looks so pretty and polished!

She got a flatbread with falafel and other fixings! I’ve been meaning to try that falafel stuff. Sounds like it would be good, AND it’s vegan!

My bowl had:

  • Super green salad base
  • Grilled chicken (last week eating meat!)
  • Red pepper hummus/Eggplant red pepper hummus
  • Quinoa Tabbouleh
  • Diced tomatoes, cukes and onions
  • Fresh mint

Mid-afternoon snack:

I finally got to trying my first Quest bar! I wasn’t expecting the hard consistency, but then again having it lay over my icepack probably had a little part in that. The chocolate peanut butter had great flavor and kept me full for a loooong time.

Dinner:

I’ve been pretty apprehensive about eating meat/obvious animal-based products ever since I watched Forks Over Knives, so when my mom said she was making salmon burgers, I got a little nervous.

I ended up being pretty hungry and didn’t care as much when it came to dinner time. I think it’s all just so clear in my mind right now. I know that in reality, fish, and salmon for that matter, is probably the best and most nutrient dense animal out there to consume.

My mom did such a fabulous job though. Unfortunately, the dinner pics are in installments because the sweet potato fries weren’t ready by the time I was ready to eat my salmon burger. I hope you all will forgive me.

Homemade Salmon Burger:

  • 1/2 red bell pepper
  • 1/2 yellow bell pepper
  • 1/4 cup Flax Plus Multibran Flakes
  • 2 garlic cloves
  • 2 lbs salmon
  • Fresh lemon/lime juice
  • 1 tb soy sauce
  • 1/2 tsp salt
  • Green onions to taste

All ingredients were blended in the Ninja blender, formed into patties, and grilled.

Today’s coffee:

I haven’t been having a cup of coffee in the morning lately since I’ve been drinking shakes and often add a shot of coffee in there anyways, but this morning I figured I would switch it up.

I just used Maxwell House brewed coffee (that my dad makes every morning), 1 truvia packet, and a bit of almond milk.

Yes, today was the second day of class of my second summer semester. You can tell I’m ready to get my learn on.

Mid-afternoon snack today:

After my class today, my mom and I ran out to the NVCC Loudoun Campus to get my Microeconomics textbook, and what do you know? There was a shopping center with a Sweet Frog out there. We all know what the next mission was.

Oh, and don’t you worry about our naked topping-less froyo. Mother and I would never leave our froyo hanging. She always has a ready bag of sliced almonds in the car and I had a package of brown sugar cinnamon Belvita wafers in my purse I used. I know what you’re thinking, we’re secretive topping geniuses. This is true.

This was the perfect treat. I hadn’t had froyo in ages it felt like. And you know a girl can only go so long without her froyo…

As I post all of this food, don’t think that I wasn’t thinking about the vegan lifestyle the entire time. I find myself constantly weeding out what is and isn’t vegan. It’s actually pretty surprising the amount of food you can’t eat, but that’s why there are so many alternative products I guess!

Alright, well back to finish my last chapter of BIT! My final is on Saturday! I’m so close, I can taste it (food blog appropriate?)!

    I think you’re crazy for not getting all the fun fro-yo toppings. Yolo.

    1. Oh em gee. I have heard that was good! I will have to try that. As far as toppings go, I think my mom and I were going for the minimalistic route today. Perhaps next time ill get a little fancier? 😉
