Oh hey strangers!
It’s been almost a week since my last blog post. My deepest apologies. I feel like I have truly been all go, go, go without a second to stop and catch my breath. I get up at 6 AM, work out, get ready, leave for work at 8 AM, come home around 4:30 PM, have dinner, and either go to class from 6:30 to 10:10 PM or do homework all night until I head to bed around 10:30 to 11 PM. It’s a vicious cycle.
You live and you learn though. In the future, I would probably not work a full time internship alongside 2 classes, but hey, that’s okay for now. I’ll live.
I’m currently taking a recharge day on my Wednesday off, which as you can see, is much needed. Aside from doing more homework and quizzes, I finally got out and about.
This morning I met with my good friend Kendall at Tropical Smoothie in Gainesville, close to her house, for a belated birthday date. Her birthday was this past Monday, so I still needed to give her her gift.
This is Kendall! Isn’t she adorable?
At Trop Smooth, Kendall got the Sunrise Sunset and I got the Acai Berry Boost. Both delicious.
When I got home later this morning, I worked through some more chapters of Econ and decided I needed a little Vitamin D if there was anyway I could continue working.
The weather has been so gorgeous today, so I took my studies to the outdoors!
It felt so good to finally be in the sun again. Like my head apparel?
I came back in for some food because, well it had been about 2 hours since I last ate, so naturally it was time. More frequent, but smaller meals = gold.
I whipped up some garlic basil tomato quinoa! Favorite food EVER.
I paired it with my mom’s jalepeño pesto tilapia she had made earlier. The flavors didn’t really mesh, but they were both yummy.
Does my tilapia not look a little like South America? How wordly!
And that leads me to now, taking a quick break from the books to do a little bloggy-blog.

Friday after work, I was exhausted. You weren’t expecting that one, were you?
I made a special request for Pomodoro’s pizza! It’s my favorite in all the land.
My order: white pie w/ spinach and garlic. Yes, this is a treat.
Dessert consisted of apple slices and almond butter. Yumz.
On Saturday, I started the morning with school work, after a work out. Surprise, surprise.
After depthy convincing, Kendall persuaded me to come over, get away from my studies, and enjoy the weather with her at her pool. Just a short ride on 66 W away.
We pooled it up for a little bit, then headed to Chipotle and afterward, to a frozen yogurt chain I had never heard of. They’re popping up everywhere!
My burrito bowl:

- Medium chile salsa

My froyo:
- Dark chocolate
- Apple pie
- Cafe latte
- Tart (I know it doesn’t go, but it’s my favorite)

- Fage Total 0% fat Greek yogurt
- PB
- Almond butter
- Cinnamon
- Almonds

- Grilled chicken kabob
- Grilled veggie medley
- Steamed corn on the cob
For whatever reason, I was feeling a looking nauseous on Monday after my bike work out and just had some cereal for breakfast, some of my favorite cereal though.
- Nature’s Path Heritage Crunch
- Almond milk
- Pinch of cinnamon
For lunch, I brought leftovers from dinner, which were almost just as good.
When I returned home from work, I made up some quinoa and had a nice little dinner for one.
Tuesday was yet another day in the life.
Breakfast was apples and PB/almond butter.
Lunch at work = leftover quinoa. I usually microwave it for about 40 sec, but chilled also works.
Oh yeah, and my lifesaver through out the work day is gum. I don’t know where I would be without it. Bored? Gum. Hungry? Gum. Tired? Gum. AND my music.
Later Tuesday night while I was studying, I whipped up some of my delish specialty oatmeal.

- Almonds/cashews/hazelnuts
- Flaxmeal
- Chia seeds
- Dark chocolate chips
- Almond milk
- Cinnamon
Hopefully I can find my way back to sanity and a little more free time soon. We’ll see.
Summer session 1 is almost over anyways, at least for one of my classes. Then summer session 2 literally starts the very next day. Isn’t that just great?
